They look delicious! I have never actually purchased or cooked beets. Maybe I will now.

try it! they are so startingly bright to work with. and the taste is earthy and not overpowering. I chop them into chunks and steam them, then use the (pink) steam juice in the blender for the right consistency.

yum! we cannot keep these in the house long!

The muffins look really mouth-watering! I think I will try them for the next picnic with my sisters.

As I just came back from vacation without internet, I'm spending this sunday afternoon reading all the blog posts I missed. Thanks so much for sharing your wedding day with us! I definitively have a soft spot for weddings (perhaps most women have?) and your photos make me cry. The whole wedding is so... you. It's wonderful that you didn't had a traditional wedding but one that fits you and your life.

These are the prettiest! I love that I have your happy handwritten recipe for them and it's about time I gave them a try ~ just picked up a new gluten free flour and settling back in to the comforts of home after time away.

Can I used 2 cups of AP flour instead of 1 c AP and 1 c wheat?

I would think so. I mix up the flours sometimes and they always turn out delicious. :)
